
~Quick and easy to prepare bliss balls for when you are struggling through that sugar snowstorm~

Cook time: No cooking required
Serves: 10 small or 5 medium sized balls
Chocolate Snowballs
Ingredients
1 cup walnuts
1 cup pitted dates
2 tbsp cacao powder
Desiccated coconut for rolling
Add the walnuts to a food processor and pulse 3 times. Turn the speed to medium and process for about 20 seconds until crumbly. Add the dates and cacao and pulse 3 times. Process on medium and until combined and the dates chopped well. Roll mixture into balls and roll in coconut. Store in an airtight container in the fridge or freezer.
Lemon and Orange Blossom Snowballs
3/4 cup ground oats
1/4 cup cashews
2 tbsp hemp seeds
1 tsp poppyseeds
2 tbsp brown rice malt syrup
1 tsp orange blossom water
Zest of half a lemon and its juice
Sesame seeds and/or desiccated coconut for rolling
Method
In a food processor add the oats and process for about 2 minutes or so until ground. Don’t worry if it isn’t completely ground. Add the cashews and pulse 3 times. Add the rest of the ingredients and process for about 2 minutes until it is well combined. You may need to scrape down the sides once or twice. Roll the mixture into small or medium sized balls and coat them in your topping. Store in an airtight container in the fridge or freezer.
