Bulgur and Seed Salad

~ A delicious and nutritous, refreshing summer salad ~

Prep time: 40 minutes
Cook time: No cooking required
Serves: 4


1 cup fine bulgur
3 cups water
1 stalk diced spring onion
1 small grated carrot
1/4 diced green capsicum
2 tbsp sultanas
2 tbsp pepita seeds
1 tbsp hemp seeds
1/2 lemon juiced
1 tbsp olive oil
Salt and pepper to taste
Garnish with fresh dill (optional)


Place the bulgur and water in a bowl and let stand for 30 minutes, or until the bulgur has absorbed all of the water. If there is still some water left just drain the bulgur in a sieve. There is no cooking here required as it is already precooked.

In a bowl add the rest of the ingredients to the bulgur and mix well with a fork. Enjoy immediatly or refrigerate for the next day.
