Homemade Granola

~Delicious wholesome crunchy granola. You’ll never want to buy it from the store again!~

Prep time: 10 minutes plus 30 minutes cooling
Cook time: 20 minutes

Ingredients

4 cups rolled oats
1/2 cup chopped walnuts
1/2 cup chopped cashews
1 tsp ground cinnamon
3/4 cup olive oil (or coconut oil)
1/2 cup maple syrup

Directions

Preheat your oven to 175C fan forced (or about 200C for a non fan oven) and line an oven tray (I used 30cm x 40cm) with baking paper.

Add all of the ingredients into a bowl and mix really well and then spread it on to the tray. You can use your hand or a spatula but make sure to get it right to the edges. You want it to be flat and even all over. Bake in the oven for 20 minutes or until golden brown.

Let it cool on the tray for 20-30 minutes. This will allow the granola to set and become crunchy and form clusters when you break it apart. Store it in a glass jar or an air tight container.

Cooks note: You can add any nuts in this granola that you like, such as almonds or even pecans. Or you can leave them out all together. Pumpkin and sunflower seeds are really nice in this and other warming spices like nutmeg and ground ginger. Don’t be afraid to experiment!
