Sweet Potato & Kidney Bean Salad With Avocado Cream Dressing

~A delicious colourful salad perfect for a picnic or a BBQ~

Prep time: 15 minutes
Cook time: 15 minutes
Serves: 4-6

Ingrediants

Salad

400g red kidney beans
1 small cinnamon roasted sweet potato
1/2 cup frozen corn cooked or from a can
1 cup slightly steamed tuscan kale chopped (or keep it raw if you like)
1/4 tsp smokey paprika
1/4 tsp coriander powder
1 tbsp fresh chopped parsley
1 tbsp fresh chopped coriander
Vegan feta or homemade baked cheese and cherry tomatoes to garnish (optional)

Cinnamon Roasted Sweet Potato

1 small sweet potato, washed, peeled, cut lengthways and sliced or cut into cubes
Olive oil
Ground cinnamon
Salt and pepper to taste

Avocado Cream Dressing

1 avocado
1 tbsp tahini paste
Juice of 1/2 lemon
1/2 tsp garlic powder
Salt and pepper to taste

Directions

For the avocado cream dressing, add all of the ingredients to a blender and blend until creamy. Or you can add it to a bowl and use a fork or spoon to mix it really well until creamy.

For the sweet potato, add it to a bowl and drizzle a little olive oil ( or oil of your choice) on it, some ground cinnamon, salt and pepper to taste. Bake it in the oven at 180C fan forced for about 15 minutes or until tender and crispy. Use this time to prep the rest of the salad ingredients and lightly steam the kale if you’re going to.

For the salad, add all of the ingredients to a bowl and mix well. Add the dressing and mix well again. Enjoy all of this deliciousness!

Cook’s note: Lightly steam the kale for 2-3 minutes to soften it a bit or steam it for longer if you like. Alternatively you can keep it raw. I have used the Tuscan kale but you can use whichever you like, or substitute it for spinach.

I used homemade baked garlic cashew cheese and cherry tomatoes to garnish this salad.

If you have any left over of this salad, it’s really nice the next day to warm it up in a pan by lightly sauteing it in some oil for about 5 minutes. Add it to a bowl and then add the dressing.
