
~A perfect accompaniment to your breakfast bowl or enjoyed on it’s own warm with some coconut yoghurt for a snack or dessert~

Cook time: 30 – 40 minutes
Serves: 6-8
Ingredients
8 medium sized apples peeled, cored and chopped
Juice of half a lemon
1/4 tsp ground cinnamon
2.5 cups water
Method
Add the apples and water to a pot and bring to a boil on medium to high heat. Lower heat to a simmer and add the cinnamon. Cook for 20-30 minutes until apples are tender and then add the lemon juice and cook for a further 5 minutes. Roughly mash the apples with a potato masher and set aside to cool.
Place the stewed apple (including the liquid) into a clean jar and store in the refrigerator. This can keep up to 2 weeks.
Cook’s note: I use this same recipe for pears or sometimes pears and apples together. This is just as tasty served warm or cold.
